A very easy meal that has everything you need in one bowl (fiber, protein, fat), and is filling and delicious. The tortellini provides a quick carbohydrate option, a small amount of tomato soup was used for flavor, but the bulk of the liquid is chicken broth to keep carbohydrates at a more appropriate amount (for most people!) per serving. Frozen spinach provides a cheap load of nutrients. Sausage brings in the protein and fat… Bonus points for using local meat – I was able to purchase Patriot Meat at a farmer’s market. Yum!
10-Minute Sausage Tortellini
9 minutes if you move extra fast ๐ A complete meal in one pot that the adults and kids will both enjoy!

Ingredients
- 1# Sausage
- 2 tsp Minced Garlic
- 20 oz. Tortellini Buitoni Mixed Cheese Tortellini
- 12 oz. Frozen Spinach
- 2 C Tomato Basil Soup Pacific Foods
- 4 C Chicken Broth
- To Taste Ground Black Pepper
- 1 C Shredded Mozzarella Cheese Sargento
Instructions
- Brown sausage in a skillet over medium heat until cooked through, add 2 tsp. minced garlic and stir in.
- In large soup pot, add tortellini, spinach, chicken broth, and tomato soup. Bring to a boil and cook for 7 minutes.
- Add the cooked sausage to the soup mixture, stir in 1 C shredded mozzarella and ground black pepper, to taste. Serve, or keep over warm stovetop. ENJOY! Good for 3 days – Cover & refrigerate.
