Spice up your breakfast… Literally! ๐
I mean, it’s hardly a recipe – But my patients needed more options for breakfast that are simple. So, here you go!
I get it, some mornings it’s the best you can do to remember to throw a yogurt in your bag and rush off, but some mornings we can try to slow down and eat a warm meal. You can find me eating this on a Friday morning with the blinds open and making myself chug water before I finish my cold cup of coffee.
Chorizo Eggs Breakfast
Spice up your breakfast, and make it nutritionally complete with protein, fiber, fat, and including heart-healthy fat! This is an easy prep ahead skillet meal for easier, tastier mornings.

Ingredients
- 1 lb. Chorizo
- 8 Eggs
- 2 Avocados
- To Taste Hot Sauce
- Topping Sour Cream
- Optional Corn Tortillas or Blue Corn Chips
Instructions
- Brown 1 lb. of ground chorizo – Make this ahead and store in air-tight container to make breakfast easier every day.
- In a skillet over medium heat, add a drizzle of olive oil and a portion of chorizo – Let it heat up just a little. Press chorizo down on skillet into a thin, flat layer.
- Add 1-2 eggs on top and let cook until desired doneness.
- Add a sprinkle of ground black pepper on top.Remove from skillet (slide it off or use a spatula), and plate.
- Add 1/4 avocado and a dollop of Daisy sour cream. Shake a little (or a lot) of hot sauce on top. Eat by itself, add a piece of toasted corn tortilla, or have 1/2-1 portion of blue corn tortilla chips on the side.
